Choose 500g of your favourite protein (eg chicken) Pick from the list: mushrooms (shiitake, wood ear) • root vegetables • firm tofu • black soybeans, black-eyed peas) • dried seafood • 4 fresh ginger slices (optional

Vegan option: sub with hearty vegetables or plant-based protein like tofu or beans.

2L water or stock (plus extra for blanching protein and soaking herbs).

1. Blanch the protein: Add rinsed protein in a stockpot of boiling water. Return to the boil for a few minutes, strain /discard water.

2. Rinse the herbs: Gently rinse the dried herbs under cold water

3. Clean the protein (skip for vegan option): After blanching, rinse the protein under clean water to remove impurities and excess fat.

4. Start the soup: In a soup pot, bring 2L of water or stock to a boil. Add the rinsed herbs, ginger, protein, aromatics / vegetables if using

5. Simmer: Boil for 10 minutes, then reduce to the lowest heat setting. Let it simmer gently for 2–3 hours.

6. Finish and serve: Stir in any condiments (if using), season with salt to taste, and let it rest for 5 minutes before serving
